Avocado Smoothies, YUM!

One of the best ways for you and your kids to enjoy avocados is in a variety of delicious smoothies.  An avocado’s texture is perfect for smoothies, not to mention the great taste and nutritional value.  You can easily create your own by adding a ripe avocado, one or two other fruits (for example a banana and 1/2 cup blueberries; frozen fruits work great as well), 1/2 cup yogurt or milk (any milk will work, including soy, rice, almond), and for a boost of nutrition you can add a green veg like spinach or kale, wheat germ , flax seed and even whole oats.  Since it is packed with loads of essential nutrients, avocado smoothies can be a great snack as well as a wholesome breakfast.

Here is my family’s favorite version.  Enjoy!

Tropical Smoothie

1 Ripe Avocado

1 Banana

1/2-1 cup Mango (we use frozen mango) or 1 cup Papaya

1/2 cup Kefir or Plain Yogurt

Agave to taste

Handful of baby spinach leaves (optional)

1 Tblspn of Flax Seed (optional)

Ice (optional)

Blend for 3 minutes, makes approx 2-3 servings, leftovers can be refrigerated for 1-2 days.
