On the 7th day of Christmas, we brought you…MORE cookies!

Let’s be honest.  We couldn’t stop at two cookie recipes.  Not at Christmas and not when we are headed to a cookie swap tomorrow night with friends.  Below is another holiday favorite.  It’s pretty and festive and looks great on any Christmas table.  As yesterday’s post stated, these are not “health food cookies”.  We believe that there is a time and a place for delicious, sugar filled food.  As long as the whole batch isn’t devoured in one sitting.  Enjoy every second of this season…without going overboard!

Linzer Tarts

1 C soft butter

1 ½ C sugar

1 egg

1 ½ tsp vanilla

3 ½ C flour

1 tsp salt

Confectioner’s sugar

Raspberry preserves (all natural, no sugar added)

In a bowl, cream together butter and sugar until fluffy.  Beat in egg and vanilla.  Stir in flour and salt.  Mix to make a smooth dough.  Form dough into 4 even balls, wrap and refrigerate for 2 hours.

Preheat oven to 375 and spray pans.  Roll dough 1/8 inch thick between sheets of waxed paper.  Cut with cookie cutter.  Bake 8-10 minutes or until lightly browned.  Let cool and fill with raspberry preserves (about 1 tsp).

Sprinkle with confectioner’s sugar.  (Kids love helping with this part!)

For best results, assemble cookies and let stand overnight.
