On the 8th Day of Christmas We Baked the BEST Chocolate Peppermint Cookie Ever and Some Home Made Fudge!

Those of you who love York peppermint patties will love this cookie.  I just baked them this afternoon and their brownie like texture, chocolatey taste and minty finish are simply amazing.  The best part is that they were easy to make, no mixer, no food processor, just an old fashion whisk and bowl.  This cookie has become my new favorite, you have to try it!



Chocolate Peppermint Cookies

2 ounces bittersweet chocolate

1 cup flour

1 tsp baking powder

1/4 cup unsweetened cocoa

1 cup sugar

4 tblspn melted butter

3/4 tsp of mint or peppermint extract

1/2 cup confectioners sugar

2 eggs

Melt chocolate; whisk together flour, baking powder and cocoa; whisk together sugar, eggs and melted butter, gradually add melted chocolate and mint extract until smooth, stir in flour.  Refrigerate dough for at least 3 hours, roll tspn or tbslpn size balls in your hand, roll in confectioners sugar and bake at 325  for 15-17m for large cookies and 13-15m  for small cookies.  They should be just slightly firm the center.  (source: martha setwart living magazine)

We’re also making homemade fudge to share with friends and family, here’s how:

Fantasy fudge
3 cups sugar
0.75 cup butter
2/3 cup evaporated milk
One 12 oz package of chocolate chips
One 7oz jar of marshmallow cream
1 cup chopped walnuts
1 tsp vanilla
0.5 cup peanut butter
Combine sugar, butter and milk in pan.  Bring to a full boil.  Boil 5 minutes – don’t go over or fudge may crumble.  Remove from heat.  Stir in chocolate until melted.  Add marshmallow cream, peanut butter, nuts and vanilla.  Beat till blended.  Pour into butter greased 9 x 13 pan.
