Chicken Soup for the Cold

Whenever my husband gets a cold, he craves chicken soup.  Literally to the point of “needing” to get it.  Immediately.  This is probably pretty common for many of us, who were cuddled up on the couch as kids, eating a steaming bowl of chicken and noodles when we were feeling under the weather.  In my house, my dad made it often during the winter.  It became a comfort instead of an elixir.  The perfect winter meal.  So, whether you are surrounded by tissues on the couch, or looking for a warm, soothing meal for your family tonight, check out this Tuscan Chicken Soup recipe from Nature’s Health Foods (www.natures-health-foods.com/chicken-soup).  Cut up some warm, whole wheat bread and enjoy a meal with your family.

Nature’s Health does a great job of adding “super” ingredients to this could-be boring dish.  Canellinni beans, tomatoes, zucchini, plum tomatoes, garlic, carrots.  With this many hearty ingredients, you don’t have to relegate soup to the first course. 

Although this may be an easy meal for older kids, some of you have spoken up about the challenges of feeding soup to toddlers.  In that case, we have had success pureeing this down and serving it through a straw.  Or, more easily, mashing it up and serving it with a fork using less broth.  Alternatively, you can finely chop all of the ingredients before starting and that would also make it easier for small hands and mouths to eat.
