Crock-Pot Meals

Spring is finally here!!  With that comes those really warm days mixed with those somewhat chilly days.  On top of that the t-ball and soccer practices start, outdoor play dates and dance classes begin, and it seems almost impossible to spend a lot of time preparing a meal each weeknight for your family.  This is why I love make ahead crock-pot recipes.  You can spend an hour or so on a weekend morning chopping all veggies, preparing your protein, etc. for each recipe and then just throw all into freezer bags until you are ready to put into the crockpot.  You can put everything into your slow cooker that morning and when your family comes home from their busy day, you have an amazing meal waiting for you!!  Here is one of our favorite recipes!

Crock-pot Pork Loin

Pork Loin (shorter and wider loins cook better than longer/narrow ones)

¼ cup Olive Oil

½ cup Grainy Mustard

12 Garlic cloves

6-8 Plum tomatoes, diced

3 to 4 Large Sweet Onions, halved and sliced into half moons

10-12 Carrots, sliced into rounds

2-3 Yellow or Orange Peppers, sliced

Vegetable or Chicken Broth or Beer

Salt/Pepper

Season pork loin with salt and pepper and cover with mustard, let sit for 1-24 hours in refrigerator. Heat olive oil a large pot and sear pork on all sides until golden brown.  Remove pork and let sit.  Add onions and garlic, sauté for 5 minutes.  Add tomato, sauté for 5 minutes, and then add carrots and peppers.  Sauté for an additional 10 minutes.  Place sautéed vegetables in crock-pot, place pork on top of vegetables and add either broth or beer to cover half of pork loin.  Cook on low or med on crock-pot for a minimum of 4 hours, but probably best between 6-8 hours.  Pork loin will be so tender you can cut it with a fork!  Serve with rice or mashed potatoes.  Excellent the next day in a sandwich or tacos.  Enjoy.
