I’m sure many of you have seen asparagus and thought to yourself, “what am I supposed to do with this?” Over the past few years it has become one of the most popular veggies in the country. Not only is it easy to prepare, it also has a mild taste that makes it a favorite for kids as well.
Asparagus is packed with nutrients and is a great source of antioxidants. In addition to that is is an excellent source of folate, B Vitamins, Iron, and Vitamin K. In addition to that, asparagus is considered a negative calorie food since it contains an abundance of dietary fiber.
Since asparagus holds up well while cooking, try adding some to your favorite omelet, stir fry, quiche or just steam them with fresh lemon!
