Kamut Salad and Kamut Spirals with Chicken-Artichoke Wine Sauce

Mediterranean Kamut Salad

2 cups Kamut Grain
4 cups water
1/4 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
4 celery ribs, diced
1 cup diced red bell pepper
1/2 cup sliced black olives
1/4 cup chopped cilantro
1/2 cup chopped parsley
2/3 cup crumbled feta cheese
1/4 cup olive oil
2 tablespoons balsamic vinegar

Preparation:

1. Prepare Kamut by soaking in water overnight.

2. The next morning, drain the grain, rinse it, and place in a large pot with the water, salt, and pepper.

3. Bring to a boil, cover, and simmer for 1 hour or until the grains are plumped and a few have burst.

4. Remove from heat and, if necessary, drain excess liquid.

5. Cool the grain to room temperature.

6. Place cooled grain in a large bowl.

7. Add celery, red pepper, olives, cilantro, parsley,feta,olive oil, and vinegar to the grain and mix gently to combine.

8. Adjust seasonings, adding additional salt and pepper to taste.

9. Let salad stand 15 to 30 minutes before serving.

Kamut Spirals with Chicken-Artichoke Wine Sauce

1 (12-ounce) package kamut spirals
2 tablespoons olive oil
1 1/2 pounds chicken breast tenders, cut into bite-sized pieces
4 garlic cloves, minced
1/2 cup white wine
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 (15-ounce) cans artichoke quarters, rinsed, drained, and finely chopped
1/2 cup (2 ounces) grated Parmigiano-Reggiano cheese
1/3 cup finely chopped fresh basil
Chopped fresh basil (optional)

Preparation

1. Cook pasta according to package directions, omitting salt and fat.

2. Heat oil in a large skillet over medium-high heat. Add chicken to pan; sauté 2 minutes or until browned. Add garlic; sauté 1 minute. Add wine, salt, pepper, and artichokes; simmer 5 minutes or until sauce is thickened and chicken is done. Remove from heat; stir in cheese and 1/3 cup basil.

3. Place sauce and pasta in a large bowl; stir gently to combine. Garnish with chopped basil, if desired.
