Here is a great recipe that uses fresh black raspberries instead of the traditional black raspberry preserves that most call for to give your meal that maximum health benefits. Enjoy!
Black Raspberry Lemon Chicken
4 to 6 boneless, skinless chicken breasts
Freshly ground sea salt and pepper to taste
1 (6-oz.) container fresh black raspberries, mashed
1/2 cup honey
1/2 cup fresh lemon juice
1/4 to 1/2 tsp. crushed red pepper
Chopped fresh rosemary
1. Rinse chicken and pat dry; season with sea salt and pepper.
2. Grill over medium heat for about 5 to 7 minutes on each side or until chicken is cooked through.
3. While chicken cooks, combine black raspberries, honey, lemon juice and red pepper in a small saucepan.
4. Bring to a boil; reduce heat and simmer for 5 minutes. Let cool slightly before spooning over grilled chicken.
6. Sprinkle with rosemary.
