Black Raspberry Lemon Chicken

Here is a great recipe that uses fresh black raspberries instead of the traditional black raspberry preserves that most call for to give your meal that maximum health benefits. Β Enjoy!

Black Raspberry Lemon Chicken

4 to 6 boneless, skinless chicken breasts
Freshly ground sea salt and pepper to taste
1 (6-oz.) container fresh black raspberries, mashed
1/2 cup honey
1/2 cup fresh lemon juice
1/4 to 1/2 tsp. crushed red pepper
Chopped fresh rosemary

Preparation:

1. Rinse chicken and pat dry; season with sea salt and pepper.

2. Grill over medium heat for about 5 to 7 minutes on each side or until chicken is cooked through.

3. While chicken cooks, combine black raspberries, honey, lemon juice and red pepper in a small saucepan.

4. Bring to a boil; reduce heat and simmer for 5 minutes. Let cool slightly before spooning over grilled chicken.

6. Sprinkle with rosemary.
