Do you have a busy day ahead of you? Here is a great on the go snack or lunch that will help you get through another meatless monday!! These are full of veggies and the nori gives them a great crunch the kids will love! This is a great alternative to traditional wraps and you can switch up the ingredients based on your little one’s preferences! I love adding a layer of hummus for extra flavor!
Toasted Nori Burritos
1 umeboshi plum
1 cup cooked brown rice (leftover works great)
2 sheets toasted nori
2 romaine lettuce leaves
1 avocado, sliced
1 apple, sliced
4 fresh basil leaves
Leaves from 6 cilantro sprigs
Leftover cooked kale or salad greens
Tear the umeboshi plum into little pieces and discard the pit. Place half the rice or quinoa on each sheet of nori and top with the remaining ingredients. Roll the nori into a cone shape around the filling; if it’s rolled tightly, you can seal each burrito by wetting your finger to dampen the edges of the nori.
