I’ve created a chocolate monster. It all started with potty training. My daughter figured it out in 3 days, my son, on the other hand was a bit more challenging. He refused to poop in a potty. So after three months of pull-ups we decided to do what any sleep deprived, desperate parent would do and we went cold turkey. I won’t disgust you with the details of all the accidents that occurred as a result, but one day after exhausting everything from magical wands that have super potty powers to stickers, I used chocolate as a bribe. And bam! He went in the potty. After two successful weeks, I stopped the incentive, but it was too late. Chocolate became the prize and now I find myself negotiating chocolate on a regular basis. Most commercial chocolates, like Hershey kisses etc are filled with sugar and have very little cocoa, so I am trying to use higher quality, darker chocolate and making some of my own treats. Here’s one we made yesterday, it was a huge hit! And yes, it’s better than Reese’s!
What you’ll need:
1 16oz bag chocolate chips
1tblsp coconut oil
2 ripe bananas
Peanut Butter
24 mini muffin cups
First, line the pan with the muffin cups,
Then, melt chocolate chips with coconut oil in a pot over boiling water,
Slice bananas,
Place one piece in each cup,
Top each banana with a teaspoon of peanut butter,
Once chocolate is melted, using a tablespoon, cover each banana with chocolate
Place tray in freezer, and voila…
yum!!!! Do you think we could leave out the peanut butter or sub in sunbutter?? Thinking something nut free?
