Festive 4th of July Fruit Cubes

Coming up with ideas for festive red, white, and blue food for the Fourth of July can be a little tricky when you’re trying to avoid food coloring (specifically the blue!). Fruit is the easiest way to achieve that color combo, but I wanted to try something new this year instead of making another flag cake topped with berries. So I decided to ditch dessert and dress up our drinks with frozen fruit cubes.


I simply pureed strawberries, blueberries, raspberries, and blackberries (separately, of course) then poured each puree through a fine mesh sieve to get rid of the seeds. I then poured the seedless purees into an ice cube tray and froze them overnight. (The raspberries and blackberries produced the boldest colors.) Drop the cubes into a glass of seltzer, club soda, or lemonade and they immediately turn your beverage a pink hue. As the cubes melt, you’ll get a fruity treat in your drink. (Just add some vodka for an adult version!)


For an even easier option, I also froze some watermelon balls and blueberries overnight then added them to some seltzer.


Sit back, sip, and enjoy. Preferably while sitting on a comfy adirondack chair and watching fireworks. It doesn’t get more festive than that!
