I saw a recipe for Strawberry Cheesecake Bites the other day that instantly made my mouth water. The original recipe called for lots of cream cheese and powdered sugar, so I decided I would try to make a healthier version by using greek yogurt. To my surprise, the end result was delicious! I’m sure the “cheesecake” filling isn’t as thick as the original recipe’s, but they were still tasty and MUCH healthier. They also only took about 20 minutes to make. Strawberry cheesecake without the guilt!
STRAWBERRY “CHEESECAKE” BITES
- 1 lb strawberries
- 1 cup greek yogurt (if you are patient, you can strain it overnight)
- 1 t vanilla
- honey or agave to taste
- graham crackers
Cut holes in the strawberries to accommodate the filling. You’ll also want to cut off the tip on the bottom so they will stand up.
Next, whisk the yogurt, vanilla, and honey. Add the filling to a pastry bag or a Ziploc bag with the end snipped off. Fill the strawberries with the “cheesecake.”
Crumble some graham crackers. I put mine in a Ziploc bad and crushed them with my honey container. Top each strawberry with the graham cracker crumbs.
